When Is a Sprouted Potato Still Safe?

Not all sprouted potatoes are destined for the trash. The safety of a sprouted potato largely depends on its condition.

Minor Sprouting (Usually Safe)

If your potato exhibits the following characteristics, it is generally safe to consume:

  • Small sprouts
  • Firm texture (not soft or wrinkled)
  • Minimal to no green coloring

In such cases, you can still use the potato with proper preparation. Here’s what to do:

  1. Cut off the sprouts completely.
  2. Peel away any green or discolored areas.
  3. Use the remaining potato as you normally would.

Extensive Sprouting (Not Safe)

Conversely, if you notice the following signs, it’s best to discard the potato:

  • Long or numerous sprouts
  • Soft, wrinkled texture
  • Prominent green coloring

These indicators suggest higher levels of glycoalkaloids, and consuming such potatoes is not worth the risk.
