Instructions
1. Prepare the Prickly Pear Pads: Lay the cactus pads on a cutting board. Carefully trim off the edges where spines are concentrated, and scrape off any remaining glochids and larger spines. Rinse and dice the cleaned pads into 1-inch pieces.
2. Boil the Cactus: Place the diced prickly pear pieces into a medium saucepan with 2 cups of filtered water. Bring to a boil, then reduce the heat to low and simmer for 15-20 minutes until tender.
3. Cool and Strain (Optional): Allow the mixture to cool slightly. For a smoother drink, strain the mixture through a fine-mesh sieve, pressing down on the solids to extract all the liquid.
4. Blend the Mixture: Transfer the cooked prickly pear pieces and their cooking liquid to a blender. Add fresh lemon juice, honey or agave nectar, and a pinch of sea salt.
5. Blend Until Smooth: Blend on high speed until completely smooth. Adjust the consistency with more water if necessary.
