  • **Prepare the Hamburger Steaks:** In a large bowl, gently combine the ground beef, egg, breadcrumbs, minced onion, minced garlic (if using), 1 teaspoon Worcestershire sauce, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Mix until just combined – don’t overmix, or your steaks can become tough.
  • 2. **Form the Steaks:** Divide the mixture into 4 equal portions. Shape each portion into an oval or round patty, about 1/2 inch thick. Make a small indentation in the center of each patty with your thumb to prevent them from puffing up while cooking.
  • 3. **Brown the Steaks:** Heat the 2 tablespoons of oil in a large skillet or cast-iron pan over medium-high heat. Once hot, carefully place the patties in the skillet (you may need to do this in two batches to avoid overcrowding). Cook for 3-4 minutes per side, until nicely browned. The patties don’t need to be cooked through at this stage. Remove the browned patties from the skillet and set aside on a plate.
  • 4. **Start the Gravy:** Reduce the heat to medium. If there’s a lot of excess grease in the pan, carefully drain some out, leaving about a tablespoon. Add the 2 tablespoons of butter to the skillet. Once melted, add the thinly sliced onion and sliced mushrooms (if using). Cook, stirring occasionally, until the onions are softened and translucent and the mushrooms have released their moisture and started to brown, about 5-7 minutes.
  • 5. **Make the Roux:** Sprinkle the 2 tablespoons of flour over the cooked onions and mushrooms. Stir constantly for 1-2 minutes to cook out the raw flour taste, creating a light roux.
  • 6. **Whisk in Broth:** Gradually whisk in the beef broth, a little at a time, until smooth and no lumps remain. Bring the gravy to a simmer, stirring frequently, until it begins to thicken.
  • 7. **Simmer and Finish:** Stir in the 1 teaspoon of Worcestershire sauce. Return the browned hamburger steaks to the skillet, nestling them into the gravy. Reduce the heat to low, cover the skillet, and let it simmer for 15-20 minutes, or until the hamburger steaks are cooked through and tender. Stir occasionally to prevent sticking.
  • 8. **Season and Serve:** Taste the gravy and adjust salt and pepper if needed. Serve hot, spooning plenty of that incredible gravy over each steak. This is absolutely amazing with mashed potatoes, rice, or egg noodles, and a side of green beans!
